Roasted beets, Pacific cod slathered in mayonnaise (the olive oil kind) with a very generous sprinkling of paprika baked in the 375f oven after the beets were roasted, along with a thick slice of homemade sourdough oat raisin bread (that has some grated orange zest in it too!).
My wife was a happy lady, she loves roasted veggies and fish.
I was too, the mayo/paprika method is one of my all time favorites for flaky white fish.
