As self appointed Chief Moral Officer at work I grab the office credit card to organize an employee appreciation meal. I'm always looking for something that's easy for me to prep. Someone said they do freezer bag omelets for camping trips and said it would adapt to a work setting easily. We have a hot plate and I brought an electric skillet.

fry bacon, saute onion, bell pepper, chop jalapenos, chop ham, breakfast sausages, chop mushrooms, chop tomatoes.

Beat enough eggs for everyone in a pitcher and season with salt and pepper.

Boil water in a big bean pot.

Label freezer bag with the person's name with a sharpie marker. Fill bags to taste and add eggs. Seal to remove as much air as possible.

Toss filled bag into boiling water for 10 minutes. Pull out and squeeze to check for raw egg. Toss back into the water for a few minutes if there is still raw egg. Pull out and release onto a paper plate.

I served about 40 people (actually they served themselves) and my prep time was less than an hour and was just frying bacon, chopping and sauteing.

They tasted great.

We have done that for years. Easy, quick and less cleanup. Good tip.

Some bags are ok for that and some are not. Something about stuff from the plastic bag in boiling water .

Good post---I was also informed by a friend with FDA that if you freeze bottled water in their plastic containers it will release the bad toxins contained in the plastic. I have no clue if this is true so just piling on.

In addition to the mqplatic bags, the Zip & Steam bags from Ziplock are designed to handle higher temps. I can find any documentation that says they are "boilable", but they are designed to handle the heat of a microwave which can generate significantly higher temps.

I'm going to use foodsaver bags on our next camping trip (after freezing the raw omelet).
