I didn't consult the calendar; and I'm positive I'm early (perhaps even WAY early) in the season, but I've had a hankerin' for a pot roast recently.
Slow Cooker Pot Roast
3 pound Chuck Roast (salted/peppered, floured and browned)
5 small new Potatoes quartered
Bag O' Carrots cleaned and halved
2 small onions rough chopped
1 Tomato Diced
1 Poblano quartered(left over from Sam's Sauce adventure)
5 cloves Garlic crushed and minced
2 Bay Leaves
Sprinkle of Thyme
Liquid Base
1/2 cup Sam's Verde
half drunk can of Dr. Pepper
10 or so healthy dashes of Worcestershire
Dash of Hickory Liquid Smoke
Mimosas (sans the OJ) for cook lubricant...
Slow Cooker on High for a couple hours. I'll drop it to low after that until dinner time. I've always done the Eastern/Mid West version of pot roast. The South West twist should be interesting.

I'm punch drunk. Nice hot kick at the end. Still gotta thicken up the gravy. Even the kiddo cleaned his plate.
